Macaroni and Cheese

There is a strong emotional attachment to macaroni and cheese. Cheese and pasta... it's no wonder people of all ages gravitate to this decadent delight.. simple and our taste buds love it. And it's so easy to make with Kraft Dinner a staple in many kitchen cupboards I too grew up with Kraft Dinner. Mom loved that I loved it, and it was easy to make and inexpensive. Like mother like daughter, so when my kids were little, I didn't hesitate to go the simple route and dish out this pleasing meal. Of course, our Macaroni and Cheese is a little different now. This whole-food, dairy-free version is AMAZING. Jamie said; "This is one of my favourite recipe so far! My boyfriend couldn't believe there wasn't any cheese in it. " Enjoy this recipe and hopefully, it brings back those incredible memories of just eating a good old fashion bowl of Mac'n & Cheese.

Roasted Garlic

With the holidays over, we may find ourselves in need of a little TLC. I know I may have rubbed shoulders with a few people fighting a cold.... and being the holidays... extra stress, late nights and indulging a little more than usual (yes I ate truffles), my immune system was compromised and welcomed some uninvited guests.   At the first sign of a cold, I infuse my body with liquids, preferably warm nourishing teas and bone broths and eat a lot of roasted and raw garlic (sorry if I smell extra nice). Most importantly rest, early bedtime and reduced sugar and low-carb diet (sugar will suppress your immune system) is key to reducing the duration and severity of illness.

Roasted Beet Noodles with Pesto and Kale

If you love pesto and beets, you will love this recipe... and even if beets are not necessarily your vegetable of choice, the pesto sauce brings in a delightful flavour... that even I can enjoy the beets in this salad. :) This salad is low carb with only 8.6g net carbs (for my keto friends) & high is healthy fats!  Omega-3 fatty acids support brain function, cognitive health, cardiovascular health, reduce triglycerides, support mental and emotion well-being... to name a few of the benefits! ✔  It's no wonder I recommend Omega-3 fatty acids in your diet.
