It’s one of my favourite times of the year – strawberry season! Not just because I can make a strawberry spinach salad, but nothing quite compares to the sweet taste of fresh, local strawberries in the summer months. Even better, these red gems are a great source of vitamin C, folate, fibre and potassium. They are low in sugar too with only 7 grams per cup!
When looking for strawberries in your supermarket, opt for organic, as strawberries are at the top of the dirty dozen list.
Strawberry Balsamic Spinach Salad
The Delicious Strawberry Spinach Salad RECIPE is a great source of vitamin C. Strawberries taste divine in this spinach maple walnut recipe.
Toast walnuts in a toxic-free pan over medium heat. When slightly browned, coat with maple syrup. Turn heat to low and stir until sticky (about 2 minutes). Remove from heat.
Divide your spinach into bowls. Top with sliced strawberries, goat cheese and your toasted walnuts.
Whisk together the balsamic vinegar, olive oil and salt. Drizzle desired amount of dressing over your salad and enjoy!
